Executive Chef — 3-Month Contract

Role Summary

We are hiring a highly experienced Executive Chef (specialized in Malay Cuisine) on a 3-month goal-oriented contract to lead and elevate our Malay menu offering. This role is built for a results-driven chef who can deliver fast improvements in menu quality, consistency, kitchen discipline, and profitability within a short timeframe.

Key Responsibilities

  • Lead the end-to-end Malay kitchen operations: prep, service execution, and quality control.
  • Develop and refine Malay menu items that are commercially viable and operationally efficient.
  • Set clear kitchen standards for taste, plating, portioning, speed, and cleanliness.
  • Build structured SOPs: recipe cards, preparation workflow, cooking methods, and holding procedures.
  • Drive food cost control: portion discipline, yield management, wastage reduction, and stock accuracy.
  • Ensure strict adherence to food safety and Halal standards at all times.
  • Train, coach, and discipline the kitchen team to achieve consistent performance.
  • Coordinate ordering, receiving, FIFO, labeling, and storage organization (chiller/freezer/dry).
  • Work closely with management to hit contract goals and report progress weekly.

Contract Goals (3-Month Outcomes)

  • Establish standardized Malay recipes and SOPs (ready for repeatable execution).
  • Improve consistency and reduce customer complaints related to food quality.
  • Achieve agreed targets for food cost, wastage control, and portioning accuracy.
  • Strengthen kitchen discipline, cleanliness, and service readiness.
  • Upskill key kitchen staff through structured training and assessment.

Requirements

  • Strong proven experience as Executive Chef / Head Chef in Malay cuisine (high-volume or commercial setting preferred).
  • Excellent leadership, training, and kitchen control skills.
  • Strong understanding of costing, portion control, yield, and operational efficiency.
  • Able to create SOPs and enforce standards with discipline.
  • Calm under pressure and capable of running a fast-paced service.
  • Must have legal working rights in Malaysia.
  • Bachelor Degree in Culinary or related field OR Certificate in HACCP/HALAL is an advantage.

Work Schedule

  • 6 days per week, Normal Hour/Shift(flexible depends on necessity with maximum 45 hours per week)
